Title: Biotransformation of Fructooligosaccharides by microorganisms
Abstract: 
For thousands of years natural enzymes made by microorganisms give new face of formation of food products which are good in health benefits, disease prevention, treatment and general well-being. The science and technology of designing food product for health benefit is relatively new trend and led to development of so many biotechnological and pharmacological companies. Short chain fructooligosaccharides (scFOS) a prebiotic compound are alternative sweeteners with various nutritional properties like non cariogenicity, safe for diabetes, minimal calorific value, bioavailability of minerals, colonic carcinogenesis and absorption of Ca+, Mg+ and Fe+ ions. Structurally FOS consisting of 1-kestose (GF2), nystose (GF3), and 1-β-fructofuranosyl nystose (GF4) in which fructosyl units (F) are bound at the β (2→1) position of sucrose molecule. The commercial production of FOS comes by enzymatic microbial bioprocesses by fructosyltransferase (E.C 2.4.1.9), β-fructofuranosidase (EC 3.2.1.26) or by controlled enzymatic hydrolysis of inulin by inulinase enzymes. The main goal of this topic is to demonstrate biotransformation processes of FOS formation which has attracted interest by biotechnologist and microbiologist across the world.
Biography: 
Dr. Mohd Anis Ganaie is an Assistant Professor and Head Department of Zoology in Government degree college Handwara, an affiliated college with University of Kashmir, Srinagar J&K, India. He has completed his Post doctorate under “Science Without Border” programme (Open merit Post doctorate fellowship) awarded by National Council for Scientific and Technological Development Ministry of Science, Technology and Innovation (CNPq/MCTI), Brazil. He has done his Bachelor’s degree in University of Kashmir and Masters in Zoology, specialization in “Cell and Molecular Biology” in Bundelkhand University campus. He also obtained his Ph.D degree from Dr. Harisingh Gour Central University Sagar, MP, India and has been rewarded two Fellowships (UGC BSR meritorious Fellowship) for whole Ph.D period and MP Young Scientist Fellowship, for better performance in research work. He has published 16 research papers and 2 review articles in international prominent journals like Carbohydrate Polymers, Process Biochemistry, International Biodeterioration and Biodegradable, Journal of Taiwan Institute of Chemical Engineering, Journal of molecular Catalysis, B: Enzymatic, Journal of Applied Biochemistry and Biotechnology, Arabian Journal of Chemistry, Antonie van Leeuwenhoek Journal of Microbiology etc. He has delivered lectures on various national and international conferences and served as a reviewer in wide range of international journals. Currently he is interested in progression of human health by various prebiotic oligosaccharides which influences gut microbiome.
